TIA Wellness Smoked Cauliflower Recipe

If you enjoy plant-based meals, it’s hard to go past this superb smoked cauliflower recipe from TIA Wellness Retreat in Da Nang, Vietnam.

TIA is an all-encompassing wellness retreat which offers a range of vegan and non-vegan food. I recently stayed at the retreat and this was one of my favourite dishes. TIA Wellness Resort’s Smoked Cauliflower recipe is easy to make and tasty.

Ingredients:

Corn seed                     70gr

Garlic                           10gr

Oliver oil                       10ml

Shallot                          10gr

Roasted cauliflower      250gr

Turmeric powder          3gr

Olive oil                        15ml   

Quinoa                         50gr

Crispy Quinoa               5gr

Grilled Shallot               20gr

Dry Moringa                  Decoration

Salt pinch                     Depending on personal taste    

Method:

– Begin by boiling the corn kernels until they are tender

– Heat a skillet over medium-high heat and add olive oil. Sauté minced garlic, shallots, and the parboiled corn kernels until golden. Season with salt to taste and blend all ingredients until a smooth and consistent sauce is formed.

– Create a mixture of turmeric powder and olive oil, ensuring all surfaces of the cauliflower are evenly coated.

– Place the cauliflower in an oven preheated to 180°C and roast for approximately 15 minutes, or until it develops a golden-brown color and releases a smoky aroma.

– Meanwhile, cook the quinoa in boiling water until it becomes tender then drain excess water

– In a separate skillet, heat olive oil over medium heat. Add the cooked quinoa and season with salt, ground black pepper, and additional seasonings to taste.

– For presentation, begin spreading corn sauce at the base, then arrange the smoky roasted cauliflower atop. Garnish the dish with crispy quinoa, grilled shallots and dried moringa over the dish to add texture and visual appeal.
