Hungry for a bright bite? These vibrant rainbow rice paper rolls by Lee Holmes are as fun to eat as they are to make! Packed with crisp veggies, fragrant herbs, and a nutty crunch, a plate of these is perfect for those who want to “eat the rainbow” promised by a certain candy jingle – minus the sugar crash. Paired with a zesty dipping sauce, this recipe is both nourishing and delicious – making them an easy crowd-pleaser or a wholesome solo treat!

INGREDIENTS

For the Rolls:

  • 10 rice paper sheets

Filling:

  • 6 small organic romaine or gem lettuce leaves, finely sliced
  • 100 g (3½ oz) brown rice vermicelli, blanched and cooled
  • 1 cucumber, sliced into thin batons
  • 1 carrot, sliced into thin batons
  • 1 red capsicum, sliced into thin batons
  • 1 yellow capsicum, sliced into thin batons
  • ¼ red cabbage, shredded
  • ½ bunch fresh mint, finely chopped
  • ½ bunch fresh coriander, finely chopped
  • ½ cup macadamias, finely chopped

Raw Christmas Pudding Cake Pops

  • ½ cup water
  • 2 tbsp tamari
  • 1 tbsp honey
  • 1 tbsp sweet paprika
  • ½ tbsp almond or nut butter
  • 2.5 cm (1 inch) piece fresh ginger, grated
  • 1 garlic clove, minced

INSTRUCTIONS:

  1. Make the Dipping Sauce: Whisk together all dipping sauce ingredients thoroughly in a small bowl, then transfer to a dipping dish.
  2. Prepare the Rolling Station: Set up a rolling station with all filling ingredients, rice paper sheets, a damp chopping board, and a large shallow dish filled with warm water.
  3. Soak the Rice Paper: Soak one rice paper sheet in warm water until soft. Lay it on the chopping board.
  4. Layer the Filling: Start with a lettuce leaf, then add some vermicelli, a small handful of each vegetable and herb, and a sprinkle of macadamias.
  5. Roll the Rice Paper: Gently roll the rice paper over the filling away from you, folding the sides inward as you roll until you reach the end. Repeat with the remaining rice paper sheets.
  6. Serve: Cut the rolls in half and serve with the dipping sauce. Enjoy!
