SPINACH MUSHROOM ALMOND TARTS
1. Ingredients: (for 3 tartlets of 8,5cm wide)
Chickpea flour ½ cup
Almond flour ¼ cup
Tapioca starch 2 tbsp
Fresh thyme ½ tbsp
Fresh rosemary ½ tbsp
Coconut oil 3 tbsp
Olive oil 2 tbsp
Fresh spinach 4 cups
Mushroom ½ cup
Red onion ½ tbsp
Leek 1 tbsp
Garlic ½ tbsp
Salt & pepper Depending on personal taste
2. Method:
– Combine chickpea flour, almond flour, and tapioca starch in a bowl, seasoning the mixture with salt and pepper.
– Add coconut oil, herbs, and 3 tbsp of chilled water into the flour mixture, working it into a dough using your hands.
– Once the dough comes together, wrap it in cling film and refrigerate for at least 30 minutes.
– Divide the chilled dough among tart shells, pressing it evenly into the bases and pricking the bottoms with a fork. Bake the shells at 180°C for approximately 15 minutes, or until they become crisp and golden brown.
– For the filling, heat oil in a pan and sauté the onions until softened. Add the spinach, leek, and mushrooms, cooking for an additional 3 to 5 minutes.
– Stir in lemon juice and continue cooking for an additional 2 minutes.
– Spoon the prepared filling into each tart base.
